<p class="MsoNormalCxSpFirst">Few restaurants can claim to have as many notable chefs come through the kitchen in such short time as Trio did. The famous Evanston spot helped launch the careers of <b>Grant Achatz, Rick Tramonto, Curtis Duffy, Michael Carlson</b> and more as they pushed the envelope with avant-garde new American cuisine. Despite a relatively moderate run of 14 years that lasted from 1993 to 2006, Trio earned numerous accolades and its impact can still be felt throughout the city. In 2014, Achatz and <b>Dave Beran</b> paid homage to the groundbreaking restaurant by recreating its menu at <b>Next</b>.</p>

<p class="MsoNormalCxSpFirst">Long before River North was the bustling neighborhood it is today, it was an area bereft of attractions. That was until the lively <b>Gordon Sinclair</b> came around and opened his eponymous contemporary American restaurant in 1976. It proceeded to transform Clark Street into a destination worth visiting and also led the way in establishing trends such as cell phone bans and discouraging no-shows through the collection of credit card information. Signature dishes included artichoke fritters with béarnaise sauce and flourless chocolate cake while famous alumni include <b>Michael Kornick</b>, who served a stint as executive chef. The restaurant closed in 1999 and the space is now occupied by <b>Naha</b>.</p>

<p class="MsoNormalCxSpFirst">Hungarian chef <b>Louis Szathmary</b> came to America with nothing but his affable, larger-than-life personality soon made him an icon. His BYO Lincoln Park eatery (a rarity at the time) The Bakery was open from 1962 to 1989 and served diners a mishmash of continental dishes including a famous beef Wellington, which became a Chicago favorite. Not content with being confined to just the kitchen, Szathmary was also an early public figure in the culinary industry who authored The Chef’s Secret Cookbook and could be seen on television and magazines.</p>
<p><span>Today, a street just behind the restaurant is named for the chef.</span></p>

<p class="MsoNormalCxSpFirst">No one could have expected a French restaurant in Wheeling to become a travel destination but that’s exactly what happened to Le Francais. The famed <b>Jean Banchet</b>, the city’s first celebrity chef, paved the way for fine-dining in 1973 with his cooking and diners soon followed from all over the country after <b>Bon Appetit</b> named it the America’s best restaurant in 1980. Banchet retired and sold the restaurant in 2001 but his legacy lives on with the <b>Jean Banchet Awards</b>, a yearly honor given to Chicago’s best restaurants and chefs.</p>

<p><span>A Loop staple from 1920 to 1984, Blackhawk restaurant brought in crowds with its fine steaks and signature Spinning Salad. Servers would pour dressing over a whirling bowl of 21 ingredients while describing the process, a concept taken from <b>Lawry’s the Prime Rib</b> out in California at the time. The restaurant was also known for its live big-band entertainment and specialty prime rib rolling cart service. After the original location shuttered, its legacy lived on at <b>Don Roth’s Blackhawk</b> in Wheeling until that spot closed as well in 2009.</span></p>
