Stephanie Izard's latest spot is a hit with customers for melding the old and the new. "The Fat Club" has smoked turkey, ham, bacon, Butterkäse cheese, avocado, cabbage, tomato, mayo, special sauce all on "fat toast" (made in house).

One of the cooler spots in Chicago (how great is it to eat in a railroad car?), Silver Palm lays out a modern take on this classic sandwich. Their "Southern Pacific Railway's Duck Club Sandwich" is filled with grilled duck breast, prosciutto, sun-dried cherry compote on brioche.

Brad Rubin's modern diner boasts a more classic deli version of the club. "The Number 24" layers pastrami, corned beef, chopped liver and Swiss cheese.
