One of the most emulated facets of Hot Doug's are the duck fat fries. Inspired by Sohn's visit to Paris restaurant Bordeaux five years before opening Hot Doug's, he wrote in Hot Doug's The Book that he started making them for fun and for himself but that "they started to gain in popularity to the point that I had to start keeping a list of names and bringing them out one by one." Sohn still serves them only on Fridays and Saturdays.
