Like most restaurants and bars throughout Chicago, many coffee shops are constantly trying to find new ways to diversify their drinks—especially the iced coffees. "With specialty coffee on the uprise, larger companies are also starting to pay more attention to market quality iced beverages," says Jacqueline DesMarais, retail educator at Intelligentsia Coffee. "People have started paying a lot more attention to how iced coffee is brewed and those questions have helped further increase the popularity of iced coffee in Chicago."

Iced coffees aren't just more popular, they're also becoming more and more intricate and creative. Baristas — in a similar way as mixologists — are creating unique caffeinated cold beverages all the time and placing them on menus. "Coffee has very much followed similar trends to craft cocktails in that people are now seeking quality instead of just their daily fix," DesMarais says.
