Reports of a meat shortage have swept through America that last few weeks with plants closing from fears of advancing the spread of COVID-19. Locally, prices of some cuts have increased, but Chicago is well situated and well stocked in the Midwest.

This isn’t an invitation to eat more meat, even butchers — like Rob Levitt of Publican Quality Meats in Fulton Market — are advising customers to eat less. Chicago’s restaurants have plenty of meat-free options for takeout and delivery. But stay at home has forced more people to cook from their own kitchens, and for those surveying the headlines wanting ethically sourced meats, this map is here with choices all across the city. These includes restaurants now selling fresh meats and wholesalers making their supply available for the first time to the general public.

Sometimes grocery stores won’t cut it. So take advantage of the spring and summer months in Chicago by ordering from ones of these vendors and firing up the grill or smoker.

The meat industry is mostly dominated by white men, but Purely Meat Co. is an exception. Run by the wife-and-husband team of Maribel Moreno and Joseph Musillami, this West Humboldt Park meat supplier has been supplying meats for Gibsons, One Off Hospitality, and Tanta for years. They have now permanently pivoted to also selling meats to the general public. They have a variety of steaks, burgers, and family packs for order online. They are also working with Casa Humilde beer, so customers can pick up a beer and meat pack from District Brew Yards in West Town.

Rob Levitt moved to Publican Quality Meats after founding his own butcher shop, Butcher & Larder. Levitt’s philosophy is to source meats from local farms which respect the environment. These farms, he says, produce higher quality meats which also satisfy better: Customers don’t have to eat as much to stay full. Leavitt. PQM has opened a virtual butcher shop. They’ve also expanded to the North Side where customers can order via Tock and pick up at the Big Star across the street from Wrigley Field. In the West Loop, they’re offering curbside pickup and delivery.

Peoria Packing may be the last vestige of that legacy, as customers venture inside and could grab and pick out the cuts they want. El Che Steakhouse & Bar isn’t changing its name again. Chef and owner John Manion has opened a meat shop inside his restaurant, and intends to build out a display case. Manion wants to give customers access to meats only available at restaurants. That includes the massive Maximo, a three-bone beef short rib that he served at the Time Out Market. They’re hoping to be open again the first week of June.
