Katz’s pop-up sells out in a day
There were some unhappy customers on Thursday morning after Uber Eats and Katz’s Delicatessen ended what was supposed be a four-day pop-up from Wednesday to Saturday. The N.Y. icon partnered with Uber Eats on pop-ups in select U.S. cities and for its Chicago stint, they used Publican Quality Meats in Fulton Market as its base. The parties didn’t anticipate such a high demand and Uber stopped taking orders around 11 a.m. on Thursday. Some customers said they made orders earlier and when they showed up at PQM they weren’t accommodated. An Uber spokesperson confirmed “a few orders were processed before the kits could be marked as sold out, but those ordered were quickly refunded.” Still, a few customers told Eater Chicago they wished the whole thing was handled better.
Greektown bar officially closed after city shut down
Almost two months after city officials shut down the Greektown bar, DrinkHaus Supper Club appears permanently closed at 820 W. Jackson Boulevard. City officials told Block Club Chicago that DrinkHaus’s ownership last week agreed to the shut down after spending the last few weeks fighting the city’s actions. The city’s closed the bar down due to code violations on July 3, but prior to that there was a fight outside the bar that led to the shutter. For operator Teddy Gilmore (who wasn’t immediately reached for comment), it’s another downtown venue shut down by the city. Officials in 2015 closed Nouveau Tavern in River North and Gilmore claimed the city held racial biases against African-American-owned businesses. There have been racially charged comments on neighborhood Facebook groups over the closure. DrinkHaus opened in August 2018.
Acclaimed baker makes West Town pop-up permanent
Aya Pastry, which debuted as a pop-up in July at 1332 W. Grand Avenue in West Town, will now pop up every from 8 a.m. to noon on Saturday mornings for the foreseeable future starting on September 7. Acclaimed pastry chef Aya Fukai is still working toward opening a bakery at a more permanent location. For her Saturday project, she’s starting an off-menu bread program to give other bakers on her team an outlet for their creativity. Fukai, who worked at Gold Coast steakhouse Maple & Ash, was Eater National’s 2016 Pastry Chef of the Year.

Sausage makers hope to broker peace for Chicago and Wisconsin
Dovetail Brewing on Saturday in Ravenswood is hosting an “encased meat peace summit” aimed at Chicago Cubs and the Milwaukee Brewers fans in town for the series at Wrigley. Dennis Lee (a food writer and pizza chef at Paulie Gee’s in Logan Square) and John Carruthers (a food writer and communications manager for Revolution Brewing) have created a sausage that brings together flavors from Chicago and Wisconsin. It’s called the F.I.B. Dog (Wisconsinites love calling those south of the border “fucking Illinois bastards”). It was Lee’s idea and Carruthers developed the recipe which Paulina Meat Market executed. The brats are made with pork, cheddar curds, mustard, and beer. They’ll be topped with Spotty Bovine Mustard, beer bath onions, Secret Stadium Sauce, relish, and celery salt. Carruthers teased they’ll have other surprises including celery salt-rimmed Underberg.

Black Dog unveils malört gelato
Chicago’s seen malört pies from Hoosier Mama and malört lattes from Finom Coffee. Now Black Dog Gelato is getting in on the fun. The West Loop location is hosting a tasting on September 13 to unveil its new malört-inspired flavor, based on the infamous spirit. The variety features grapefruit, vanilla bean, and malört. Black Dog’s Jessica Oloroso said her customers are to blame. Earlier this summer, she asked Facebook users for flavor suggestions. Oloroso’s friend, Eamon Daly of Pop Up Karaoke, came up with the unholy idea.
