Inside Wishbone, a West Loop Classic Reborn After 26 Years

A West Loop favorite has been reborn; Wishbone has moved from its old location into a new space hoping to give the neighborhood the same friendly restaurant with southern cooking customers have enjoyed for more than two decades. The new space is more modern and will feature a fresher take on cocktails giving customers more of a reason to linger at the bar. The restaurant is now open for breakfast, lunch, and dinner.

The new Wishbone takes over the former Bin 36 wine bar, and they’ve redecorated. The restaurant has always had a bit of a rustic feel to match the comfort food that chef Joel Nickson cooks. They haven’t turned back the clock that drastically, but there are a few touches that remind visitors that this isn’t one of those trendy West Loop restaurants opened up by a restaurant conglomerate. The Nicksons are staying true to Wishbone’s identity. There’s also paintings throughout the space from Nickson’s mother, Lia.

The drinks range from the Jeppson’s Malört-fueled Corpse Reviver 312, to the Baltimore Breakfast — a drink based on HBO’s The Wire (a beer served with a cracked egg and a shot of Evan Williams). Check out photos of the drinks and stroll through the space below. After 26 years, the new Wishbone is now open.
