GOLD COAST/THE LOOP— John Coletta has left Gibsons Restaurant Group. His departure happened in June. That means Gibsons new restaurant in River Point will no longer bear Coletta’s name. It’s now going to be called Gibsons Italia. Gibsons has promoted Jose Sosa to replace Coletta. Coletta will focus on mentoring, and consulting, according to a rep.
LINCOLN SQUARE— Timothy Cottini has moved on from Fork and Knife in Lincoln Square. The chef has already started a new job in the suburbs at Shaw’s Crab House and Tokio Pub in Schaumburg. Cottini had been with farm-to-table Fork for five years and was the opening chef at Knife when it debuted in August 2016.
MAG MILE— Lawry’s The Prime Rib has a new executive chef who spent time at Sullivan’s Steakhouse and DOC Wine Bar. His name is Steve Goellner and he has more than a decade of experience.
RIVER NORTH— River Roast quietly hired a new executive chef. His name is Cedric Harden, and he started about a month ago, a rep confirmed. Food writer Audarshia Townsend first had details of the move. Former executive chef John Hogan is also a partner in the company and is taking a different and larger role.
WICKER PARK— Management over at Links Taproom, the esteemed craft beer bar in Wicker Park, has added a new face. They’ve hired Chris Chatman as the bar’s new operating partner. Chatman most-recently worked in Fountainhead where he was general manager and beer/beverage director of the Ravenswood bar.
