Many Chicago diners have been eagerly awaiting the opening of the Ace Hotel, as the boutique chain‘s Fulton Market location includes one of the most impressive collections of culinary talent in the city. The hotel opens on Saturday along with its ground-floor restaurant, City Mouse.

Jason Vincent (Giant) is in charge of the talented team behind the hotel’s restaurant and bar. The former Nightwood chef, along with his colleagues from his innovative and acclaimed Logan Square restaurant, have brought together a staff that includes ex-Trenchermen chef Pat Sheerin. Additionally, they’ve hired beverage director Caitlin Laman, a former Food & Wine best new mixologist, who last worked in Logan Square.

City Mouse is a 90-seat space with outdoor seating (and a fire pit). There are brass-edged tables with hunter green leather seats and tubular steel frames. Design firm Commune worked with Atelier Ace to decorate the interiors. Commune is the same company Ace used at their LA and Palm Springs locations. Near the entrance, diners will be greeted by an abstract piece by LA-based artist Tanya Aguiniga. That art features several Chicago landmarks.

The restaurant will begin with brunch service every day and eventually add dinner. The brunch menu includes the celebrated “Gas Station Sandwich,” a deluxe version of what motorists would find at a rest stop with hash browns, eggs, cheese, grape jelly, sausage, and Michigan-grown fruit. There’s a rotating selection of four sandwiches for lunch that includes a grass-fed shaved beef sandwich (onions, mushroom, Swiss cheese, giardiniera). There’s also a lounge menu with a burger and pastries.

Check out the photos and menus below. The wait’s finally over as City Mouse — inside the Ace Hotel Chicago — opens on Saturday.

City Mouse, 311 N. Morgan St. inside the Ace Hotel, open 7 a.m. to 3 p.m. for daily brunch; the sandwich menu will be offered 11 a.m. daily; the lounge menu is served from 11 a.m. every day. Dinner service will be added and started at 5 p.m. daily. Reservations are available via Resy.
