Milwaukee’s Colectivo Coffee Brings Beer & Patio to Lincoln Park This Month

Its first Chicago location will also have breakfast burritos

A coffee shop is an unlikely place in Chicago for a cool sidewalk cafe, but Colectivo Coffee hopes to break the mold when its first location outside of Wisconsin opens later this month in Lincoln Park. The cafe just passed a final inspection and the opening is around two weeks away, as workers have finished converting the former Einstein Bagels at the corner of Clark and Deming, according to Colectivo co-founder Lincoln Fowler. He hopes that draft beer will attract guests, enticing them to mingle into the evening hours at 2530 N. Clark St. The beer comes from 3 Sheeps Brewing in Sheboygan, Wis.

“This is one of the best patio locations in the city, certainly in Lincoln Park,” said Fowler. “It’s going to be pretty epic out there.”

Drinkers will get to sample a variety of brews, some of which incorporate coffee. Look for a cortado imperial stout and the “One Tun Pale Ale.” Fowler’s also fond of their “Cascara Farmhouse Alesaison.” The beers are popular at a selection Colectivo locations — the chain has 16 shops.

Fowler is confident in the quality of his company’s coffee; it’s had 24 years of experience. Milwaukee and Madison, Wis. are Colectivo’s home turfs. It also offers baked goods that will be trucked in daily from their Troubadour Bakery in Milwaukee. The croissants and laminated pastries are highlights for Fowler. Other items include breakfast burritos.
