It turns out that Chicago’s first Stumptown Coffee isn’t the most anticipated addition to the forthcoming Ace Hotel in Fulton Market. Acclaimed chef Jason Vincent and his team from Eater 38-member Giant will helm the ground-floor restaurant and all the food and beverage at the ballyhooed hotel brand’s under-construction Chicago outpost at 311 N. Morgan St., the Tribune reports.
The restaurant doesn’t yet have a name or concept, but considering Vincent’s previous statements about concepts and his cooking style, it may simply focus on great food and service. What is known is that it will serve all three meals, include a lounge and a bar, and handle other hotel food things such as room service and events. Also expect it to be a “a casual, every-occasion spot,” according to a news release, with a “fresh and airy” open floor plan and a changing selection of sandwiches around lunchtime. The hotel is booking reservations for Sep. 1 and beyond; the restaurant may open before then.

Vincent took time off to focus on his family after he left the acclaimed Nightwood in Pilsen, which shuttered not long after his exit. Now, in addition the tiny-sized Giant in Logan Square — Vincent’s first own restaurant — he, along with his chef/partner Ben Lustbader and bar manager Josh Perlman are jumping into a much larger project that promises to be one of Chicago’s most anticipated new restaurants this year.
