Hyde Park is one of the most-unique communities in Chicago and today Jared Leonard seeks to win the over the neighborhood with ribs, brisket, and more at BBQ Supply Co. Leonard opened his first restaurant seven years ago in West Ridge, adopting a “pit to plate” philosophy by carefully smoking premium meats. He’s been looking for expansion opportunities and when Yusho closed, he pounced on the space at 1301 E. 53rd Street.
Diners will find St. Louis-style ribs, combo platters with pulled pork and chicken, plus brisket, rib tips, and sausage. Leonard cooks his meats with oak inside an Ole Hickory Smoker. They’re also doing barbecue nachos topped with either smoked chicken, pork, or brisket.
Leonard teased that his Stone Soup Collective — his restaurant company that includes his fried chicken chain, The Budlong — will continue to look for restaurants spaces on the South Side. While great food is most important, so is winning the trust of the neighborhood and committing to opening more restaurants is one way to endear themselves to locals.
