A poke shop could open as early as Thursday in Uptown from a co-owner of seafood phenomena Angry Crab. Mark Nguyen, who runs Angry Crab’s West Rogers Park and Wicker Park locations with his brother, David, has branched off on this new venture. It’s called Pokiology, and it’s located at 4600 N. Magnolia Ave.

"I believe poke is here to stay. It's a great, healthy meal that's reasonably priced," Nguyen said.

Nguyen told DNAinfo that he’s waiting for health inspectors to give him and his staff the green light. That could delay the opening until Aug. 2. It’s a curious turnabout for Nguyen, as Angry Crab has inspired a variety of competitors since opening in March 2015. Now it’s Nguyen who’s following the path laid by Aloha Poke Co. and FireFin Poke Shop. Hawaiian-inspired poke is popping up at places like Sushi Burrito and En Hakorre 2.0. The typical bowl consists of sashimi-grade raw fish, accompanied by veggies over a bed of rice and Asian-inspired sauces. Tuna and salmon are popular options.

Over at Pokiology, Nguyen said they’ll ensure bowls have more options for customization. Prices will range from $10.50 to $16, and they’ll have seating for 14 to 20 inside the shop. Nguyen said Pokiology’s customizable approach is what will make his shop unique, and they’ll be open from 11 a.m. to 8 p.m. for lunch and dinner. That may change depending on demand.
