Fairmont Hotel's Gastropub Opens Tomorrow For Craft Beer & Burgers Near Millennium Park

The Fairmont Hotel's new gastropub, Columbus Tap, opens on Thursday. The replacement for Aria is more casual, centering on trendy local craft beer. Management hopes to compete with spots like The Gage for tourists and their customers near Millennium Park.

The bar touts a special beer, called Bespoke Blend, that's brewed over at Maplewood Brewery in Logan Square. But most will probably go for one of the Tap's burgers, which chef Atticus Garant said will vie for burger supremacy with the city's best. The pub's menu is full of shareable dishes, including whiskey honey ham hocks and the animal crackers —pork cracklings sprinkled with seasonings. Check out the full menu below.
