Roister Inches Closer To Opening As Alinea Group Starts Hiring Process

They'll hire about 50 at launch.

Nick Kokonas remains coy as to the opening of Roister on Fulton Market. But the Alinea Group has begun the hiring process and will hold a hiring open house next week.

Kokonas is down in Miami where it's 72 degrees and partly cloudy for the Alinea pop-up, which is sold out and starts Wednesday and goes through March 13. He said they'll hire about 50 people for Roister and add more as needed when they later launch lunch service. But when's that opening date? Sure it's been delayed a few times, but maybe it's after they return next month from South Beach. Kokonas used the logic that no one hires restaurant workers to just sit.
