Another acclaimed chef is ready to do his own thing. Longtime local chef Tim Graham is leaving Travelle, the swanky restaurant inside the Langham Hotel in River North, in order to open his own restaurant, the Tribune reports. Graham is partnering with Branko Palikuca (The Dawson) and his beverage director wife Rebekah Graham on a new spot at a yet-to-be-determined location. Graham's last day at the Langham, where he also opened the seasonal patio-driven concept Elle on the River, is Valentine's Day.
Graham made much of his name at high-end Lettuce Entertain You concepts, cooking at Tru, Brasserie Jo and Paris Club for more than a decade. He joins a growing group of notable local chefs to plan their own restaurants, including Jason Vincent, Noah Sandoval, David Posey, and a slew of Rick Bayless disciples. The Langham is reportedly interviewing for Graham's permanent replacement, and Eater has reached out to both Graham and the Langham for more information.
