Rylon’s Smokehouse, the new barbecue restaurant from the owner of line-inducing Lincoln Park restaurant Batter & Berries, should open on Oct. 12, according to a restaurant representative. Derek Rylon has created a menu reflecting his unique barbecue method. And unlike Batter & Berries, the new South Loop restaurant will serve alcohol, with a focus on whiskey.

Even though it’s a smokehouse, Rylon doesn’t want the smoky flavor to overpower the meat. They’re starting the meats on a wood-fired barbecue grill and then moving them over to a smoker. Diners won’t find pork baby backs here, as Rylon’s will serve St. Louis-style beef ribs, as well as a Chicago barbecue staple, rib tips. Also expect house-made sausage links including alligator, seafood and lamb.
