Acclaimed Moody Tongue Brewing Co. officially finally opens their tasting room today at 5 p.m. in Pilsen. They’ve created a 10,000-square-foot space to sample brewery founder Jared Rouben’s chef-driven limited releases. 12 beers will be on tap behind the 25-seat, U-shaped marble bar.
One of the beers that may be on tap from time to time is Moody Tongue’s celebrated Shaved Black Truffle Pilsner. The beer’s made from an Australian black truffle, and demonstrates Rouben’s experience at the Culinary Institute of America. Rouben also wanted to keep his food simple with one savory dish (seasonal oysters) and one sweet (German chocolate cake) item. Check out the tap list below.
Overall, there’s room for 75 seats. The books surrounding the fireplace are a throwback to Rouben’s training at the Siebel Institute brewing school. There’s two leather booth areas and walnut dining tables. Mo Faux Studio, which designed many of Lettuce Entertain You Enterprises’ spots like Intro Chicago and RPM Italian, designed the Moody Tongue space in the same building as their brewing operation.
There’s no TVs inside, but Rouben said over the summer they’d drag one in for special occasions, such as the Cubs attempting to break a 108-year World Series drought. Will Moody Tongue show the World Series? Find out tonight, and check out the tap list below.
