Bow Truss Coffee Roasters Flooding Chicago With Nine New Shops

What started as a small Lakeview storefront on Broadway is now much grander, as Bow Truss Coffee Roasters founder Phil Tadros unveiled an aggressive expansion plan for Chicago. Tadros revealed addresses for nine new locations, among them the previously announced Mariano Park/Viagra Triangle space. Tadros also said even more are on their way, although he's not quite ready to reveal the other locations.

Already riding that third wave of coffee, Tadros operates seven spots in Chicago and one in Beverly Hills, Calif. A Roscoe Village spot opened last month. When Intelligentsia Coffee was swallowed by Peet's Coffee last year, Intelligentsia's founder said his company was "still a great Chicago brand," but now Tadros' expansion is poised to further carve out Bow Truss' Chicago footprint. In comparison, Intelligentsia operates six coffee bars in the city. Tadros founded Bow Truss in 2012 and last year opened a coffee plant in West Town to boost retail production.
