Wondering what construction equipment is doing on Lincoln Avenue at the site of Muskie's? None other than Paul Kahan knows, as The Publican and Big Star guru is jumping aboard the healthy fast-food train with Left Coast Food & Juice where he'll serve up bowls, smoothies and wraps. They want to expand to multiple locations, and plan opening in late March in Lakeview, according to Crain's.
One Off isn't involved in this project, which will be an enemy of the butter lobby. Left Coast vows "no butter, ever" in their dishes. Meanwhile, crews will build a 2,200-square-foot space with a 55-seat dining room, bar and take-out counter at 2878 N. Lincoln Ave. There's also a patio planned, making it quite a departure from Muskie's neon lights and 1980s decor. Muskie's ended a 34-year run after closing in September 2014.
Healthier eating is a perpetual trend, but diners are seeing more quick-service options. Kahan shared his personal stake in the concept with Crain's, talking about his weight loss and desire to give Chicagoans healthier options. They're also looking at opening a Gold Coast location.
