Savor Hot Doug's Menu at Today's Pop-Up at Publican Quality Meats

If you're going to brave the frigid temperatures Monday to get a taste of Hot Doug's at the pop-up at Publican Quality Meats, at least know what's on the menu. Thanks to social media and Lumpen magazine, folks now have a clue, and it's all about the kids. Doug Sohn's first full-fledged pop-up features encased meats never seen at his shuttered hot dog stand.

There's seven sausage selections for Monday's menu. The Michael Helminiak Jr. is a nod to Hot Doug's long-time sausage supplier at MGH Foods. That's a lamb and pork belly sausage topped with mufaletta-onion dijonnaise and double-creme brie. Then there's the Bic Markos, a reference to Markos Films, which is putting together "Hot Doug's The Movie," a film chronicling the restaurant's final days. The movie's coming together with a recent viewing of a rough cut. The item is an apple-bacon sage duck sausage with Virtue cider mustard, smoked blue cheese and honey drizzle.

The rest of the selections are the Small Fry Brinkmann (pork-truffle sausage, carmelized onion mustard, goat cheese, truffle oil drizzle); Babe Ruth Siegel (steak au poivre, bourbon mustard cream, Emmental cheese and crispy fried onion); Chint Ross (escargot and guanciale sausage with parsley garlic butter and Camembert cheese); Petur Rullo (Toulouse sausage, french-herb mustard, Great Northern beans and duck confit) and the Jay Kaplan (Mezcal-infused pork chorizo, tomatillo mole, queso asadero and fried tortillas).

These sausages weren't fixtures on Hot Doug's menu on California or Roscoe, so customers will have something new to try. Oh, and of course there's the duck fat fries. Because that will really help with those New Year's resolutions to lose weight. Folks from PQM will peddle hot beverages like hot chocolate, coffee and glögg to help warm cold encased meat enthusiasts.
