First it was Big Star at the United Center, now it's The Publican at O'Hare International Airport. A version of Paul Kahan and One Off Hospitality Group's lauded Fulton Market restaurant, recently again named one of the country's essential restaurants by Eater National, should arrive at one of the world's largest airports this spring. It's taking over the Wolfgang Puck Cafe inside Terminal 3, reports Crain's.
Publican's flirted with O'Hare before, such as in 2012 when rumors about a burger concept emerged. But this announcement shows an actual commitment, and they're calling the location Publican Tavern. One Off declined comment, referring inquiries to HMSHost, the company that secures licenses, such as Tortas Fronteras by Rick Bayless, for use at airports. DNAinfo first reported the possibility of Publican coming to ORD.
