Rick Bayless' Cruz Blanca Brewery Pushed Back to Next Spring

Because Chicago restaurant openings never experience any delays surrounding permits.

The opening of Rick Bayless' Cruz Blanca brewery has been pushed back to the spring of 2016. Permit and construction issues are the culprits, reports the Tribune at the end of their anticipated restaurants update roundup.

A peek inside the site at 900 W. Randolph St. shows workers have a while to go before staff can even think about brewing, as the interiors look fairly raw. Cruz Blanca will feature a growler program, beer brewed on premises and Chef Bayless' cuisine. This isn't the first time there's been a delay for the "nanobrewery" which Bayless had called "a completely new concept that you've never seen before."
