LOGAN SQUARE—Serendipitously arriving as The Whistler begins planning festivities for its seventh anniversary, Luke Andrews has joined the team as the acclaimed bar's new co-beverage director and bartender. Andrews, who came to Chicago after time in Michigan and Texas, previously worked at The Berkshire Room under Benjamin Schiller and Johnny Costello. Co-owner Billy Helmkamp cites Andrews' hiring as "another step in the evolution of our beverage program." [EaterWire]
ELSTON CORRIDOR—Joanna Stachon is now leading the kitchen at Ada Street now that Zoe Schor has left. Stachon was Schor's sous chef and has been with the restaurant since it opened. The 24-year-old South Sider also spent time at Publican Quality Meats as a butcher, so expect everything from the snout to the squeak, so to speak, to hit the menu once Stachon begins implementing her own spin. WEST LOOP—The long gestating wine bar The Lunatic, the Lover & the Poet has revealed their beverage director to be Naha vet Steve Carrow. The 7,000 square foot, three floored space will focus its menu on small plates and Carrow's cocktails will be a mixture of new and vintage styles, with a focus on seasonality. [Crains]
