The Band Grows: Band of Bohemia Names Matt DuBois Executive Chef

The EL Ideas vet will be in charge of the fine dining meets brewhouse's menu.

Band of Bohemia, the culinary brewhouse coming this fall from a pair of Alinea alums, has an executive chef. Former El Ideas staffer Matt DuBois will helm the kitchen, reiterating the culinary vision of Craig Sindelar and Michael Carroll's ambitious project.

Construction workers continue to scurry about at the restaurant's site at 4710 N. Ravenswood Ave. They're planning an October/November opening, and the project is one of Eater National's most anticipated openings of the fall. Sindelar and Carroll are focusing on mixing fine dining with flavorful beer, as the menu will highlight the brews, pairing the session ales with suggested food selections.

DuBois is a Chicago restaurant vet, most recently serving as the first-ever chef de cuisine at Inovasi in suburban Lake Bluff. That's a post he took in October 2014. Prior to that, he worked as chef at Café Crème, an LM Restaurant Group project that never took off. DuBois has also spent time at Douglas Park's acclaimed EL Ideas, and in Portland, Ore. He cites the West Coast as a large influence on his "seasonal-driven style."
