'Sandwich King' Jeff Mauro Will Pile Meat in Bucktown at Pork & Mindy's

Mauro and partner Kevin Corsello will put in long work for simple sandwiches when they open later this year.

After a long search for the right concept and partners, Food Network star Jeff "Sandwich King" Mauro is staking his claim to his first restaurant at the forthcoming Pork & Mindy's. Mauro and longtime friend Kevin Corsello will be throwing down a number of simple sandwiches (Mauro promises a four ingredient max) once Pork & Mindy's opens (in what used to be Red Hen Bread) later this year at 1623 N. Milwaukee in Bucktown, the Tribune first reported.

Expect pulled chicken, pork and lamb, a chicken and waffle sandwich that Mauro promises will be on point, an extra crispy BLT and a special pork bao. The process of preparing and cooking the meats for the sandwiches will be intensive, Mauro promises. Smoking whole legs of lamb, chicken and pork will be done on site, and chuck roasts will get a nice, long marinating time before cooked, and there'll be, of course, plenty of side dishes and dessert options.

Pork & Mindy's will seat 40 and the décor will include paintings from local artists that will also be available for purchase. The restaurant will also feature an evolving playlist of music selected by up-and-coming DJs.

Mauro and Corsello are anticipating that Pork & Mindy's will be a big hit, as they're already looking to grow it into a national franchise. You can get an early preview of a few of the sandwiches at this Saturday's Bucktown Arts Fest.
