Sanford Restaurant's Justin Aprahamian is bringing his award winning food philosophy to Chicago.

A nano brewery with a food program from a James Beard award-winning chef is heading to West Town. Justin Aprahamian of Milwaukee's Sanford Restaurant and business partner John Lavelle are moving Like Minds Brewing from Wisconsin to 1800 W. Walnut and are aiming for a September opening, according to Crain's. Matt Bower (Dogfish Head) will handle the day to day production.

Aprahamian said that the food will be of the same philosophy as at Sanford. Things are still in flux, but he expects the "small, focused menu" to feature "maybe ten items." Possible dishes include lamb mole, which is a favorite of Lavelle's. Another could be a Korean spin on a lobster roll with kimchi, the inspiration for which came from one of his cooks.

Right now the plan is to just serve dinner, but, depending on demand, that could change. He expects the space to hold less than 100 guests, but that number is also up in the air until construction is finished.

Another brewery that is staking claims near Like Minds is Great Central Brewing, the opening of which is unknown. They will be located at 1745 W. Walnut and also feature space for new brewers to set up shop and make their own beer.
