GOLD COAST—The highly-anticipated Maple & Ash is getting oh-so-closer to opening and today comes news of their latest high-profile hiring—wine director Belinda Chang. Previously at Danny Meyer's The Modern in NYC, Chang is "building a serious wine program" as well as "leading and mentoring a team of four dedicated, full time sommeliers." LINCOLN PARK—Aaron Martinez officially starts his Intro residence tonight, taking over for the departing Erik Anderson. Martinez, who was briefly running Elizabeth, has created a menu (which you can view below) that highlights seasonality and artful plating.
