Iliana Regan's Bunny the Micro Bakery is Cozy and Definitely Micro

The opening date is still undetermined, but Bunny is popping up at Elizabeth on August 2 and 3.

The opening of Elizabeth Restaurant chef/owner Iliana Regan's second project, Bunny the Micro Bakery, is still up in the air due to those annoying permit delays (she's hoping to unveil it to the public in August), but the inside is just about finished. And, as you can see in the photos below, the "micro" aspect of the name is certainly apropos.

The small space, with wood-paneled walls, a long communal table and micro kitchen, is nearly ready to serve Regan's baked goods, pierogies, doughnuts, breads, house-made butter and drinks. And the same space will be transformed into a popup venue, WunderPop, in the evenings to showcase full meals.

Meanwhile, with Bunny not yet open and staff "all trained up," Regan is holding a popup at Elizabeth on August 2 and 3. Many of the bakery items will be available a la carte during the day until they run out, and she's also holding a ramen popup those evenings.
