Since Heather Terhune left Sable Kitchen & Bar at the end of February (for another BKD group property in San Francisco), Lawrence Letrero (Untitled, Karyn's On Green) has been running the food program at Hotel Palomar. Announced today, Letrero has officially been promoted to the executive chef position and his menus have gone live on the Sable website.
His menu touches on various cultural cuisines (short rib poutine, shrimp and roasted squash curry, adobo pork belly, buttermilk fried chicken and waffles), reading as refined comfort food from the descriptions. Though no doubt a different preparation, Letrero includes soft scrambled eggs for brunch, a dish that stood out at the short-lived defunct Tribute.
Letrero, who also spent some time at NYC's Per Se, also headed up another now-defunct Chicago restaurant: The Refinery. He hails from Windsor, Ontario and has been cooking professionally since 2006.
