Opening Alert: Jason Paskewitz's The Blanchard Opening Quietly in Lincoln Park Tonight

Former Gemini Bistro and Rustic House chef brings his take on a modern French restaurant.

Today's the day to first experience The Blanchard, the 100-seat modern French restaurant from chef Jason Paskewitz (Gemini Bistro, Rustic House). Though Paskewitz has been tight-lipped about specific details, expect reinventions on classic French cooking in an idyllic area of Lincoln Park.

Reservations for The Blanchard are now available via Open Table, however, tonight and tomorrow is already booked up. See below for a photo of the restaurant's interior, which was posted just this morning via their Facebook page. The promise of a grand opening is also mentioned as being in the near future.

Photos reveal some of Paskewitz's dishes (including ganache les foie gras with apricot gelee, Maldon sea salt and toast points, Pistachio Bombe featuring pistachio mousse/chiffon, raspberries). Paskewitz has also promised an entire section of the menu devoted to foie gras.

In addition to the dining room, there will be counter seating for seven that observes the kitchen, as well as outdoor seating that stretches along the side of the building. Staff details gleaned from social media include executive pastry chef Marjorie Easley (Gemini Bistro) and sommelier Anthony Mathieu (NYC's Daniel).
