Bom Bolla, the long-awaited Spanish Cava bar in Wicker Park from the folks behind Pops For Champagne, will open by Friday, according to management. The bar hosted a private party at the space on Sunday on the first floor of the two-story space. Management said they'll open up the second floor in late summer.
W. Craig Cooper, a partner in the restaurant and the beverage director at Pops, wants to ensure diners aren't intimated and that they aren't chained to a single entree during their visit. Small bites, including montaditos and bocadillos (Spanish sandwiches), highlight the menu, as does a variety of seafood. Chef Matthew Lair (Kith & Kin) goal is to put together a menu that highlights simple ingredients with minimal pretense, rather than Americanized tapas.
Cooper wants to do for Spanish sparkling wines at Bom Bolla what Pops did for champagne in Chicago. He's also promoting accessibility—if drinkers aren't into Cava, they can always grab a beer pint or a glass of wine.
Bom Bolla will be open from 2 p.m. until 2 a.m. on Monday through Friday, and noon until 2 a.m. on Saturday and Sunday, with the same menu offered at all times.
