Nick Kokonas and Grant Achatz say their new restaurant, Roister, will cost couples between $50 to $500 on the high end. The duo spoke with the Trib's Kevin Pang in a wide-ranging interview in honor of Alinea's 10th anniversary.
Kokonas and Achatz declined to say when Roister would open (though it's expected to happen late summer at 951 W. Fulton Market right next to Next). They did confirm that The Aviary's executive chef, Andrew Brochu, will be in charge of food. Expect multiple preparations of meat in a single dish, such as salmon done five ways with 10 sides. The dining room will be divided into a sushi bar-type area, a la carte spaces and tasting menu spaces with the kitchen right in the middle.
There's also details on major changes to Alinea next year, two Alinea pop-ups (one in a U.S. city not named New York and another in Spain). The duo are also planning New York and Singapore posts for The Aviary. Plenty of good stuff in the interview, so check it out.
