Pops For Champagne Nearly Ready to Uncork Bom Bolla in Wicker Park

Take a sneak peek at the under-construction space.

The folks behind the venerable Pops For Champagne are less than a month away from unleashing their latest project on the people of Wicker Park. Construction is nearly complete on their Spanish wine bar and restaurant, Bom Bolla at 1501 N. Milwaukee Ave., and spirit guide W. Craig Cooper says it should open around mid-May.

What you see in the photo above is the main Cava (Spanish wine) bar, which is prominently displayed in the room immediately beyond the front entrance. Beyond that is the exposed brick entranceway to the rear dining room, which will serve Spanish small plates by chef Matthew Lair.

The space is a near gut-rehab of a landmarked building and only the facade and structure itself remains. Before long it will house what ownership promises will be the largest selection of Cava in the United States.
