Dollop Coffee Reveals Renderings For Three Expansions, Including Ukrainian Village Bake Shop

A second Streeterville location, plus spots in the Loop, Ukrainian Village and Pilsen are in the works.

Take a peek at the designs for three of the four new Dollop Coffee projects. They're planning on opening coffee shops in Streeterville and the Loop, plus a Ukrainian Village bake shop. A fourth project, a collaboration with Hoosier Mama Pie Co., in Pilsen is also scheduled for a summer opening, according to Crain's.

The five-shop chain's second Streeterville location, at 860 N. Dewitt Place, is targeted for a June 1 open, while the 225 W. Washington St. could open by late spring/early summer. They'll offer the customary Metropolis coffees, plus breakfast sandwiches and pastries from Hoosier Mama, and offer sidewalk seating. The renderings feature Wisconsin hard-rock maple for the bars with white marble. There's bar seating at both locations and two round tables for the Streeterville spot.

Dollop Streeterville

The bake shop is a larger endeavor, as it will bake goods for sale at all Dollop locations. It's more open than the cafes, and also targeted for a June 1 opening. Crain's also reported on a fourth project due for a June 1 opening near 18th Street and Blue Island Avenue in Pilsen. That spot would have a relationship with Hoosier Mama, similar to Dollop's shop in Evanston.
