Las Vegas-based Capriotti's Sandwich Shop is placing a bet on Chicago with a three-restaurant expansion plan. Ownership wants to enter the Chicago market with a downtown restaurant first, opening in late 2015. The other two are slated to open later.
The chain consists of more than 100 stores across 16 states and DC. A spokesman didn't disclose the exact location for the first Chicago spot, only saying that it will be downtown. Locations for the two other Chicago-area restaurants have yet to be determined, the spokesman added.
The specialty sandwich maker debuted in 1976 in Delaware and draws rave reviews for selections including "The Bobbie." That's a sub-sandwich ode to Thanksgiving with oven-roasted turkey, cranberry sauce, stuffing and mayonnaise. Vegetarian options also appear on the menu including veggie turkey and veggie cheesesteak.
