California Bay Area Meets Bucktown on Presidio's Opening Menus

It opens tomorrow in the Bluebird space on Damen.

Presidio owner Patrick Cullen really likes his native San Francisco. Tomorrow, on a day that may not hit 20 degrees in Chicago, he'll give the condo-dwellers and other residents of Bucktown a trendy new lounge with a dominant Bay Area theme, evident in specific cocktails, beer, wine, and ingredients from the Golden State on the opening menus in addition to its name inspiration and framed photos inside.

Standout barmen-turned-new consulting company The Dogma Group (Drumbar's Alex Renshaw, Brian Sturgelewski, and now curiously includes The Dawson's Clint Rogers), broke the cocktail selections into two sections: "Originals" and "Classics From The Bay" (homages using recipes used in Bay Area spots in specific years). The cocktails here are less boozy and more drinkable than those at some other new cocktail spots, employing a variety of recognizable, sometimes fruit-forward ingredients in 13 mixes for $13 each. Presidio serves just three beers on draft (two are from California) alongside a large-format bottle selection (all Californian) and a predominantly Californian wine list.

Chef Shaun Connelly's food menu mostly continues the theme, as California ingredients, such as Meyer lemon, kumquats, sunchoke, stonefruit and sunflower shoots, show up often in the small plates, entrees, sides and desserts. These are used in many of the requisite dishes for a trendy new restaurant or bar (steak tartare, burrata, burger, half chicken) and a few dishes that may surprise. Nine types of Fernet are available for nightcaps.
