For her first restaurant, former Top Chef runner-up Sarah Grueneberg will officially return to the cuisine that made her name. Monteverde, her forthcoming West Loop restaurant at 1020 W. Madison St., will be a "modern take on authentic Italian cuisine," partner Meg Sahs confirms. The concept was previously still "in flux."
Grueneberg, of course, worked at the Gold Coast landmark Italian restaurant Spiaggia for eight years, the last three as executive chef. She and Sahs first worked together there as line cooks in 2005.
Construction on the space is just getting underway, and the restaurant, originally slated for a spring opening, is now targeted to open in the summer. Renowned designer Karen Herold is working on the 3,800-square-foot space, so expect a standout interior. More to come.
