LINCOLN PARK—Less than a week after appearing onstage to collect her Jean Banchet award for Rising Star Pastry Chef of the Year, Genie Kwon is out as Boka pastry chef and former NoMI pastry chef Meg Galus is in. Galus, who has been honored by StarChefs, was a finalist for Food & Wine's best new pastry chef and been nominated for four Jean Banchet awards, will debut a new menu on Valentine's Day that includes "Chocolate Crudo" (70% chocolate mousse, whipped vanilla bean cream, chocolate mascarpone sponge, hibiscus & honey infused chocolate ice cream). GOLD COAST—Bar manager Alex Renshaw is exiting Drumbar nearly two years after taking over for Craig Schoettler. Renshaw is focusing on a new consulting company, which includes formulating the beverage program at the forthcoming Presidio.
