IRVING PARK—Chef changes have hit Bread & Wine. Michael Dean Reynolds is out after nearly two years and Caleb Trahan has taken over the kitchen in his place. Trahan, who hails from South Louisiana and has spent time at Table, Donkey & Stick and Alinea (as chef de partie), will change about 80% of the menu, has plans to implement the use of whole animals in dishes, focus more on seasonality, and expand the bread program.
