The owners of Bow Truss and Elizabeth are forging an alliance that could lead to Iliana Regan's baked goods —the ones she'll eventually feature at Bunny the Microbakery— inside all of Bow Truss' shops. Bow Truss owner Phil Tadros shared the news when talking about his new coffee shop planned in the Gold Coast at the Mariano Park, a Chicago Park District property with outdoor seating in the area commonly known as the Viagra Triangle.
Tadros wants to feature as much of Regan's goods as possible, but that will hinge on what the forager/chef wants. As far as expansion, he wants to open Bow Truss Gold Coast in March, and they've agreed on a seven-year contract with the park district. He said they'll fix up the kiosk's roof and walls, inspired from furniture at Bryant Park in New York. Bow Truss also wants to partner with Black Dog Gelato and bring a local, artisanal feel to the space.
"It's been great, lots of support and we look forward to growing together for a long time," Tadros wrote via email. "Everyone is excited. We are grateful to be chosen and we will not let the city and the community down."
Tadros is obviously excited about the opportunity to expand to the Gold Coast, saying that it's a very prestigious part of the city he may not have had the chance to work in—if not for the collaboration with the park district. Bunny, Regan's project at 2928 N. Broadway St. in Lakeview, has been delayed, but should open soon. It's built out and received its permits.
