Come February, James Beard Foundation Award winner Jessica Largey will take over the kitchen at Intro Chicago as the rotating concept's fifth chef-in-residence and the restaurant's first woman at the helm. She'll continue serving a la carte items, something current chef Steven Gillanders debuted at Lettuce Entertain You Enterprises' Lincoln Park spot. LEYE also announced Intro will now serve dinner seven days a week.
Largey took home the 2015 Beard award for rising star chef of the year. She spent six years at Manresa in Los Gatos, Calif., most recently serving as chef de cuisine. She left chef David Kinch's restaurant in May. Largey promises a vegetable-focused, California-inspired menu. Meats and other proteins will fulfill secondary roles, allowing the veggies to star. Largey will also prep a sharable menu with items that will change over her tenure that stretches from February to May.
