Not only did Lost Lake recently launch a new menu and a 100-cocktail secret menu, but star cocktailer Erin Hayes found enough inspiration to create another drink for Eater's fourth annual Cocktail Week at Land & Sea Dept's hotter-than-hot tiki bar on the Logan Square/Avondale border. Named "The Highland Island Surf Club for Gifted Flamingos," the tiki cocktail mixes Scotch whisky, Batavia Arrack, Falernum, pomegranate, pineapple, lemon, absinthe, Bësk, and angostura bitters.
Hayes, Lost Lake's bar manager and also the author of other new drinks on the menu, says the fall-esque flavors in Scotch, Falernum and pomegranate, as well as the challenge of incorporating whiskey into a tropical tiki drink, inspired the cocktail. "It's unexpected, but the richness and smokiness of the whiskey lend a really interesting flavor profile to what would, without it, be a less compelling, fruity cocktail," she says. The drink is served in a Jeff Berry x Cocktail Kingdom Pearl Diver glass.
