RIVER NORTH— Andrea Bonitatibus is the new pasty chef at GT Fish and Oyster. The Massachusetts native previously worked at Mindy's Hot Chocolate and made rounds in the Big Apple working with Johnny Iuzzini at Jean-Georges and Elwyn Boyles at Per Se.
Bonitatibus brings new menu items including a chocolate tart topped with chocolate and praline ganache plus cranberry sorbet; carrot cake with pineapple, coconut ice cream, orange cream cheese and coconut tuile; an apple sundae with cinnamon ice cream, apple sorbet, caramelized apples, date cake and caramel sauce; and a key lime pie topped with raspberry merge, vanilla whip and a gin and tonic sorbet. MAGNIFICENT MILE— Management at Michael Jordan's Steak House has promoted Craig Couper to executive chef. Couper had been the restaurant's executive sous chef since 2011 and previously worked at the University Club of Rockford as well as the Capital Grilles in Chicago and Lombard. [EaterWire]
LOGAN SQUARE— Longman & Eagle has also promoted Matt Kerney as the restaurant's executive chef. Kerney worked up the industry ladder, starting as a busboy before finding kitchen work. He's had stints at Ambria, Schwa and the Hubbard Inn. L&E had named Kerney chef de cuisine only in May. He's known for the addition of L&E's fried chicken roulade. [EaterWire]
