Cornerstone Plans Second Location Near DePaul; Luke's Lobster, Just Salad Coming to Loop; More

DEPAUL— A second location of a Logan Square standby — The Cornerstone Cafe — is slated to open by mid-Feburary inside a former Starbucks at 2200 N. Clybourn. It'll hold seating for about 70, including an outdoor area, said owner Paul Boidy. Most of the menu will be similar to the original location. [EaterWire]

THE LOOP— New York-based Luke's Lobster is coming this spring to The Loop. The chain, which serves seafood soups, crab claws, as well as lobster, crab and shrimp rolls is coming to 134 N. LaSalle St. They've got 9 New York locations, three in D.C. and one in Philadelphia. [Crain's]

THE LOOP— This isn't a repeat, but another New York-based chain, Just Salad, is gunning for a March opening with a 2,200-square-foot shop inside the Gibbons Building at 20 E. Jackson Blvd in The Loop. They've opened 21 locations in New York, New Jersey, Hong Kong and Dubai. [EaterWire]

LAKEVIEW— Here's a few more details on The Spanish Square, the business replacing the long-shuttered Pacifico at 1358 W. Belmont St. It will be a grocer and tapas bar where customers can sample some of the store's items. The owner wants to serve wine, but remains working through the design process with hopes of a first quarter 2015 opening. [EaterWire]
