Iliana Regan's bakery and pierogi spot is still shrouded in mystery as to where it will open, but it does have a name and some other new details. Bunny, the micro bakery is the name and it promises to be "perhaps the tiniest bakery in town," according to its website. Regan confirms that it will be "very small" with "minimal seating" and that she's hoping for a spring opening.
Regan, who is the chef/owner at Michelin-starred Elizabeth in Lincoln Square, will use brioche in breads for toast (spreadable foie gras can be added) and in the doughnuts, along with her signature pierogi. Additionally, the micro bakery will feature different cereals, jams, pastries, butters, broths, dumplings, ice cream and mushroom tea. There will even be classes on bread making and "homesteading."
The bakery's Facebook page promises that an opening date is still "TBD" but is expected to be "sooner (rather) than later." Look for more information as it becomes available.
