Acclaimed cocktailers leaving the bar they're best known for is becoming a thing. Following world's best bartender Charles Joly leaving The Aviary and beloved tiki guru Paul McGee exiting Three Dots and a Dash, cocktail maestro Mike Ryan is stepping out from behind the bar at Sable Kitchen & Bar, the Tribune reports.
Ryan, who came up through Moto and The Violet Hour, is essentially being promoted to a national education position with Kimpton Hotels, the parent company for Sable. Ryan has also been busy supplying artisan ice to many of Chicago's best bars through his production company Just Ice.
Ryan's time at Sable is already up but there's no word yet on who will take over his former position at the well-regarded River North hotel restaurant and bar.
