Kale Burger Lunch Counter Coming to Howard Street

Fresh off a two-season stint at the Logan Square Farmers Market and citing increasing demand, Brandon Byxbe's The Amazing Kale Burger is scheduled to star this November at a new lunch counter at 741 Howard Street on the Rogers Park/Evanston border. He currently has a Kickstarter up to fund additional cooking equipment for the space.

Byxbe wants to bring healthier food choices to a historically underserved area by featuring his burger with premium toppings as the cornerstone of the spot's offerings, coupled with vegetarian sides sourced from local farmers. The vegetable-based vegan burger, made without soy or gluten, is currently found at outlets such as the Dill Pickle Co-Op and True Nature Foods while also showing up on the menus of restaurants including Peckish Pig and R Public House.

The space, which holds 15-20 seats, is painted with red-and-marigold stripes in a retro circus theme and features a classic diner layout. Plans for a weekend vegan brunch as well as an expanded winter menu are in the works. Look for it in November.
