Bucktown people who miss the wine and bistro fare at The Bluebird will instead get a craft cocktail bar in the space this winter. New owner Patrick Cullen promises that Presidio will feature an "elevated cocktail program" designed by Drumbar beverage director Alex Renshaw and Fulton Market Kitchen's Brian Sturgulewski.
Cullen, a former attorney that decided to get into the hospitality game, took over the space in early July following stints at the defunct Dragon Ranch and as a manager at Drumbar, where he briefly worked with Renshaw. Many specifics on the cocktails are unknown at this time, aside from the list being "extensive," seasonal and utilizing local ingredients. Presidio will serve light food items from the space's kitchen.
In between Wicker Park and Logan Square and next door to Mindy's Hot Chocolate, Presidio will compete with cocktail bars to the south, including Violet Hour, and many further north. Many in the neighborhood mourned the loss of The Bluebird, which served wine and bistro dishes to Bucktown since 2007 and shuttered on June 26. Will the neighborhood take this cocktail bar?
