Sarah Grueneberg Building Own Restaurant In West Loop

A new restaurant from a former "Top Chef" finalist and longtime Spiaggia executive chef is heading to the West Loop. Sarah Grueneberg confirms that she has a space under construction somewhere in the neighborhood but declined to provide the exact address, name or concept at this time.

The Texas native did confirm that it's "not on Randolph" and that it "won't be Tex-Mex," which is referring to "The Texahs Restaurant" name that's associated with her on the Ramenfest lineup that was updated yesterday. "Texahs" is the overall name of the business she formed with her partner and not the restaurant itself, she says.

Grueneberg told Eater when she left Spiaggia last November that her ultimate goal was to open her own place. After spending close to a year traveling and working in Florida and other locales, that goal is nearing reality and will gain momentum when she returns from this month's "Top Chef at Sea."
